Hello, everyone! I hope you are having a terrific spring and enjoyed Easter. Today I am going to be sharing what we ate on Easter.
Breakfast: Egg bake with sausage and cheeses and croissant (all incorporated into bake).
It had great cheesy flavor and when you got a bite with the cheesy crispy outside, it was really tasty. But, as most egg bakes are, it was mushy for the most of it. The sausage sort of separated from the egg and was in clumps. Next time we will change the ratio of milk and cream so it is a bit firmer and we will cut the sausage smaller.
Snack/lunch



First I will talk about the ‘melon mosaic’. It called for watermelon, but since that’s not in season we used something similar to honeydew. I think the dish was beautiful and fun to make. It still worked somehow. My dad accidentally put basil instead of mint but it worked just fine with the tomatoes and cucumber. The feta worked really well with the tomato and cucumber, along with the melon to add some sweetness. I don’t think I would’ve changed anything as it was a healthy and refreshing snack. Now, for the arugula pesto crostini. The pesto, surprisingly, was made from arugula, and added some bitterness to the bite. On the bread was garlic butter and ricotta cheese. The butter, well, you can’t go wrong with butter, and the ricotta, it added creaminess and that good cheese flavor. The only thing I would do differently would be to smear the pesto like they do with the spoon which makes it look more elegant. Now, for the veggie plate with the dip. As a family, we had mixed opinions on the dip. I really liked its earthiness and richness but the rest of the family thought it was too thick or had too much goat cheese in it. I found, though, that the dip goes really well in a pressed ham and cheese sandwich. And I don’t really like carrots, so I mostly ate all the cucumbers and parsnips.

Our main course was ham, so good and flavorful. It went really well with the al Grotin potatoes. The potatoes were soooo cheesy and delicious 🙂 The salad was not my favorite because it had rice with it, and in my opinion it ruined the texture. The dressing was great, though. I didn’t try the asparagus but the broccolini added depth and earthiness to the ham and potatoes.
For dessert we had classic cheesecake from Cheesecake Factory at Home. It was creamy and delicious! With it I did my first fanned strawberries! They were super fun to make. Maybe some of you guys should try some and send me the pictures on my contact page! 🙂

Oh, MJ ! What a wonderful blog ! You had my mouth watering the whole time. Loved your usage of the goat cheese dip as a spread for your sandwich..brilliant ! Sounds like the 4 of you were extremely creative and busy in the kitchen. The checkerboard appetizer looks so awesome. And cudos for the great pictures you added. Your Easter table was lovely.
